A few days ago, I was driving our dogs to the groomer and noticed a building on the side of the road that appeared to be full of fresh fruit and veggies. So on the way home, I decided to stop and check it out. What really caught my attention was the sign that said “peaches,” because fresh peaches are one of my favorite summer foods! Turns out all of the produce was from a local family farm that has been in business 99 years! The lady and high school kid working that day were so friendly, and when I asked if they take cards because I didn’t have cash with me, they informed me that they just started taking venmo, but “shhh… don’t tell Grandpa!” This made me laugh because I can imagine a similar thing happening years ago in our family business when Dad started taking credit cards! I doubt Grandpa was too hip on the idea! Thankfully, I ended up leaving with some fresh peaches and blueberry syrup!
Now that I had fresh peaches in hand, I needed to decide what I was going to do with them! I had heard of people grilling peaches and was intrigued by that, so I started looking for recipes with grilled peaches. I came across one on Pinterest that contained several of my favorite ingredients and looked right up my alley… grilled peach salad with basil, burrata and prosciutto! I was sold and decided to make it for dinner the next evening.
The first thing I did was wash all the peaches in the sink using my thieves fruit and veggie soak. Aren’t they pretty?!
Then it was time to grill the peaches. While they were grilling, I brought the other ingredients out to start prepping. I’ve never had burrata I don’t think… but I decided to use what I had on hand, which ended up being dairy-free mozzarella. Apparently mozzarella is the closest thing to burrata, so I am sure either one would work well in this recipe! I used a melon baller to scoop out balls of “feese” (what Corey and I call fake cheese!) You can do this with any soft cheese to make it feel a little fancy.
Assembling this salad was so easy! Just add your lettuce of choice to a plate followed by prosciutto, basil, cheese balls and peaches… and then drizzle with olive oil and balsamic (I used glaze) and finish with salt and pepper. Let me tell you, this combination really works! YUM. I thoroughly enjoyed this salad and will for sure be making it again. I highly recommend it if you are also a big peach fan and want a light, fresh and easy summer salad for lunch or dinner!
With the remainder of the peaches, I decided to make some peach cobbler for some of the new families that have moved into our neighborhood recently who I’ve been wanting to meet & welcome! I thought it would be the perfect summer treat to take them. I found some 7×5 inch disposable “meal prep” pans at the grocery store that were a great size. The biscuits on top were sourdough, because that is apparently my new hobby! Sourdough baking takes a while to get the hang of, but wow, it is so versatile! I can’t seem to stop. Besides the cobbler, I’ve also made regular sourdough loaves, brownies, baguettes, naan bread, pizza crusts, scones & muffins! It has been fun experimenting and sharing. I don’t necessarily love to cook and bake, but I do love to feed people. I’m always making and taking food to someone, which I definitely learned from my Mom! She was always sharing food with neighbors when I was growing up. I don’t think it was a coincidence that we seemed to always live right next to an elderly widow. God knew Jennifer would look out for her! Food is the universal love language and I’m thankful she modeled “love your neighbor” to me so well!
There happened to be a little bit of extra filling and dough, so I was able to make myself an individual little pan as well! Mmmm… this is definitely one of my favorite desserts ever and I’m about to go enjoy it! Whether it be salad, cobbler or some other kind of sweetness, I hope your week is “just peachy!” 🙂
